What is the easiest way to keep track of inventory?

Count once, then stop counting by hand. Give every product a SKU, put a barcode on the shelf or the box, and record every movement at the moment it happens: received, sold, moved, written off. A tool that scans the barcode on receipt and deducts on sale keeps the count right without anyone remembering to update a sheet. Most stock errors come from movements that were never recorded, not from bad maths.

Can I use Excel to keep track of inventory?

Yes, up to a point. One sheet with SKU, description, location, on hand, reorder point and supplier works for one person and a few dozen products.
